Day 61: French Toast

I'm sure, like most of you, when it comes to french toast there is quite the dilemma. You love the flavorful deliciousness that is french toast but have trouble guncking down the eggy stinky flemmyness of it. I'm with ya all the way. But this recipe is the solution to keeping all that flavor and eliminating all the yucky not goodness that comes with an egg based recipe.

Vegan French Toast

2 bananas pulverized
1 c "milk"
1 tsp cinnamon
several pieces of bread
2 tsp oil

In a blender pulvarize the bananas till they are the consistancy of egg. Now add the milk and cinnamon. Pulse to mix. Pour into a flat bottom bowl. Lightly coat both sides of the bread. Do not soak! Heat the oil in a pan and fry on both sides.

Day 57: Pancakes/ waffles

Matthew loves the pancake....or, pankakie as they are called here. As for myself....not so much. I don't know what it is, I'm just not a fan. They're just too spongy for my liking, but I love myself some waffles. I feel like donkey on Shrek. If I found random waffles in the woods I'd be thankin the waffle fairy and chowin down. Now please don't analyze the contradiction that is my life. Matthew and I have had this discussion many times and I agree there is no rational conclusion. I plead with you just to be happy and love me as I am.

Vegan Pancakes / Waffles1 1/4 c whole wheat flour
4 dates
2 tsp baking powder
1/2 tsp salt
1 1/4 c "milk"
1 tb oil

In your trusty food processor, add all the dry ingredients, including the dates. Blend the mixture till the dates are unrecognizable. Now add the milk and oil and blend. This should be a very thick batter. Don't try to thin it out.....it doesn't work. Oil a pan and pour on the batter. Swirl the pan a bit to even out the batter. Cook on both sides.

Day 53: Chocolate Chip Cookies

No week of chocolate, no matter how hormonal it is would be complete without chocolate chip cookies. They're a classic! More American than apple pie. They're oowy, gooy, soft and chewy. Who doesn't love a chocolate chip cookie. Even Matthew and I, who can't whole our sugar, love to share a whole cookie from time to time. In fact, come to find out, Matthew snuck a box of organic chocolate chip cookies and 2 snack bags of famous amous in the other day. Like I wouldn't find out.....ha...perhaps he's been a bit hormonal too?

Vegan Chocolate Chip Cookies
2 c flour
2 tsp baking powder
1/2 tsp salt
3/4 c chocolate chips
3/4 c sweetener
1/2 c oil
1 tsp vanilla
1/2 c milk

Ok, I'm sure you've got it down by now. Mix the wet and the dry in separate bowls. Add the wet to the dry. Mix and roll into balls. Place on a greased cookie sheet and bake at 350 for 10-15 minutes or just eat the dough for cryin' out loud!

Day 52: mmm cake.......

Ok, I'm back. I think those brownies really did the trick. And to celebrate I say "let them eat cake." I've never been a big fan of sugar, chocolate in particular. They always tend to give me sugar head aches, does anyone else get those? But since I can control the sweetness factor I've been liking chocolate a lot more. Ever since I was a kid my birthday cake has always been a chocolate cake with no icing....icing...yucky!

When it comes to vegan cake, our favorite line is from the movie "Bedtime Stories" with Adam Sandler when he walks into the birthday party, "whats that smell? Is that the donkey" and the little kid with his mouth full of cake replies " no, it's the cake" while vegan cake isn't always "rank"ed on the top of the list of party foods - This cake really takes the cake if ya know what I mean.

Vegan Chocolate Cake
1 1/4 c white flour
1 c sugar
1/3 c unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 c warm "milk"
1 tsp vanilla extract
1/3 c oil
1 tsp vinegar

In two separate bowls mix the wet and the dry. Pour the wet into the dry and blend. Pour into a greased 9 x 13 pan and bake on 350 till a toothpick comes out clean. Let sit for a few minutes and only put icing on it if you absolutely have to.

Day 50: Chocolate Pudding

So, last week I shared my poke recipe which is made with tofu....ya, soy. And this is the result - bear with me.

I love chocolate pudding. I love the silky, smooth, sweet, chocolaty-ness. Yes, there is just something about it that takes the edge off of a freak out session. Truly, a spoon full of sugar helps the hormones go down, and you know it's time for the hormones to go down when your husband hands you a bowl of chocolate with a tentative smile. Yes, I'm feeling much better now thanks to my adorable husband, his fantastic foot massage, and a little bowl of chocolate love - ahhh....join me.

Chocolate Pudding

2 c "milk"
3 tb unsweetened chocolate of choice
5 tb tapioca starch
1/2 c sweetener
1 tsp vanilla extract

In a sauce pan mix 1 c milk, chocolate (if you're using chips be sure to melt them first) sweetener and vanilla. In a separate bowl, mix 1 c milk and your tapioca starch. Slowly add the starch to the other ingredients. Stir constantly till it thickens. Pour into serving bowls and let sit for about 10 minutes (ya right...) Serve warm....I've never had it cold but if you can make it to that point, more power to ya!

Day 33: Tomato and Roasted Red Pepper Soup

I'm not really a fan of tomato soup. If you've read my blog about black bean soup you'll know why. I guess it's not in my DNA. When my husband and I were dating he and his parents came over to my house for dinner. My mother had made her famous Shepard's pie (recipe to follow). My husband loves Shepard's pie.......made with tomato soup. At our house this was sin - of the worst kind. He even insulted my mother by asking for ketchup to put on it (they still have the same relationship).

Since then Matthew has learned that you don't even eat tomato soup on it's own, let alone put it in something! This was law set in stone, until one day he brought home some tomato soup with roasted red peppers. He said it was just for him, that he wanted some comfort food. Well, if anyone understands comfort food I do so I said nothing, I even tried it - then I was hooked! It was soo good! It didn't have that "hit ya in the back of the throat" tang every time you swallowed like regular tomato soup did. And it was so sweet and creamy.

While I still declare that Shepard's pie should NOT be made with tomato soup. This tomato soup has won me over.

Tomato & Roasted Red Pepper Soup
3 red bell peppers
2 tb EVOO
1 clove chopped garlic
3 - 14oz cans of diced tomatoes
2 cups vegetable broth
salt
1/2 c unflavored "milk"
2 tb vinegar (red wine is best)
sugar to taste

Put the red peppers under the broiler, turning till broiled on all sides. Let cool, then core and cut. In a large pot saute the chopped peppers and garlic in the EVOO. Add the tomatoes, milk, broth, salt and vinegar. Simmer for about 10 minutes. Pour everything into the blender or food processor. Use a dish towel instead of the lid or IT WILL EXPLODE! Bend till creamy. Return to the stove to cook for a few minutes. Add salt and sugar to taste.
