Special: Mango Salsa

Ok, mango salsa isn't Polynesian either, it's more of a tropical, mexican, quasi, international marriage thing. Kind of like Izzy marries Jenifer Lopez but with less calories and drama. This works up really fast and goes well with so much. Add a little lettuce and you have a salad...wallah.

Mango Salsa
1 mango cubed
1/2 red onion chopped
2 sweet chilies chopped (or hot chilies if you like it hot...some do)
1 cucumber chopped
1/2 bunch cilantro chopped
juice from 1 lime
salt to taste

Mix it up and there ya go........wallah.....

Day 47: Mango Mushroom Burgers

In Waikiki there is a FANTASTIC burger joint called "burgers on the edge." When Matthew and I were carnivores this was one of our favorite spots. But guess what....it still is! How often can you say that? They have a shitaki mushroom burger that is great. This is a great way to satisfy that meaty craving with the taste and the texture of a burger and get in fruits and veggies....I count this a win/win/win.

Teriyaki Marinade
1/4 c brown sugar
1/4 c soy sauce
2 tb lemon juice
1 tb sesame oil
1 drop ginger oil or fresh grated ginger
1 clove garlic minced

Blend everything in a saucepan and simmer for about 5 minutes

Let your shitaki mushrooms marinate for a few hours, preferably overnight.
Pull out of the marinade about 30 minutes before grilling and let sit. Grill till cooked through. Serve on a bun with a slice of fresh mango/mango salsa/or a slice of pineapple and all other fixins you desire.

Bonus: Thai Dessert Rice

I adore this recipe for two reasons:
1- I get to pull out my adorable rice cooker
2- It practically makes itself
okay, make it 3
3-it is sooo yummy!

This recipe is SO simple and SO yummy you'll be having it all the time! I have no idea how authentic it is but I had it at a thai resturant once, so that's got to count for something.

Thai Dessert Rice
1 c white rice (white works best for this...it's dessert, endulge)
3 c fruit juice (ex: apple, pinapple, peach from canned peaches)
1/2 can coconut milk
1 mango cubbed

In your FANTASTIC rice cooker, cook your rice with the fruit juice. When it is finished it should be extra sticky. Serve a scoop of rice drizzled with coconut milk and topped with fresh mango.
