Day 94: Relief Society Chicken Salad

All growing up my mom made this chicken Salad but this is how she made it -
9 bags shell macaroni
10 lbs red apples
10 lbs red grapes
1 gallon mayo
1 gallon coleslaw dressing....
ya get the picture. My mom seems to only be able to cook for a crowed. But since we all LOVED her cooking we didn't seem to mind. In fact we only complained if there weren't left overs! My mom made this for many a Relief Society luncheon and soon after we saw mock recipies all over the place. Some made them with maccaroni instead of shell noodles (shell works best because it holds the sauce.) Some put cabbage in it....I don't think I want to think about that. But non made them as scrumptious as MY moms! So here is my FAVORITE chicken salad recipe - minus the chicken of coarse.

Pasta Fruit Salad
1 bag shell pasta cooked
1 can chuncked pinapple
3 red apples cubbed
1 lb red grapes
2 c celery diced
1 can chopped water chesnuts

Drain the pinapple and coat the apples so they don't go brown and save the juice. Mix everything together and chill.

Sauce
2 c vegan-aise
1 drops ginger essential oils or chopped candied ginger
onion salt to taste
apple cider vinegar to taste (about 1 1/2 tb)
agave or other sweetener to taste
left over pinapple juice

Mix everything together and let chill. This is great to make a day ahead so all the flavors can meld. Serve with mandrin oranges and cashews on top. Welcome to heaven!

Day 47: Mango Mushroom Burgers

In Waikiki there is a FANTASTIC burger joint called "burgers on the edge." When Matthew and I were carnivores this was one of our favorite spots. But guess what....it still is! How often can you say that? They have a shitaki mushroom burger that is great. This is a great way to satisfy that meaty craving with the taste and the texture of a burger and get in fruits and veggies....I count this a win/win/win.

Teriyaki Marinade
1/4 c brown sugar
1/4 c soy sauce
2 tb lemon juice
1 tb sesame oil
1 drop ginger oil or fresh grated ginger
1 clove garlic minced

Blend everything in a saucepan and simmer for about 5 minutes

Let your shitaki mushrooms marinate for a few hours, preferably overnight.
Pull out of the marinade about 30 minutes before grilling and let sit. Grill till cooked through. Serve on a bun with a slice of fresh mango/mango salsa/or a slice of pineapple and all other fixins you desire.

Day 32: Butter Bean Soup

Oh, beans, beans, they truly are the magical fruit.....but not for the reasons you're thinking! I love beans! They are so versatile, so nutritious, and so delicious! I'm positive you could put beans in just about anything.....I know some are cringing at the thought.

I've had some pretty amazing beany experiences! The people of Thailand have a scrumptious bean dessert...hmm....remind me to post that one. I've had beans in ice cream and shaved ice at Motsimotos. I've had beans pretty much every way you can have them....ya, I'm a fan.

My mom makes this "white chili" that is really good, but I sound like a rebel vegan if I call it "butter" bean soup. Truly these are rebel beans! Butter beans are actually Lima beans only under a different name (they must be liberal beans to try that sort of trick). I'm sure they changed their name to get more fans. I'd much rather eat a bean called a butter bean than a Lima bean....wouldn't you? And while we're on names; Lima (pronounced ly-ma) is actually incorrect. They are actually named after Lima Peru (pronounced lee-ma) where they were first discovered by the Spanish sailors, (hmmm, who discovered it before them?) thus we should call them Lema beans........ya...lets stick with butter.

Butter Bean Soup
1 onion chopped
1 clove garlic chopped
1/4 inch thick fresh ginger
2 c vegetable broth
1 can white great northern beans
1 can butter beans
cilantro
1 tomato diced

Saute the chopped onion, garlic and ginger in olive oil in a large pot. Once the onions are transparent add the broth and all the beans. Simmer for 10 -15 minutes. Garnish with cilantro and tomato.
