Day 54: Chocolate Macadamia Nut Truffles

I have to blame a lot of this on my dear friend Penny. She is AMAZING! I love her to pieces! I was thinking about chocolate and my hormones were screaming for some and who comes to the rescue but Penny. She literally read my mind! She even had some fantastic macadamia nut chocolates shipped in! What a pal! This recipe is dedicated to her for saving the lives of Matthew and the villagers.


Chocolate Macadamia Nut Truffles
1/2 c heavy coconut milk
1/4 tsp salt
1/2 c sweetener
2 tsp vanilla extract
2 1/4 c cocoa powder
1/2 c macadamia nuts

In a sauce pan bring the coconut milk to a boil. Add the salt, sweetener, vanilla, and 1 c cocoa powder. Pour into a plastic bowl and freeze till firm but mold-able - about 3 hours. In your food processor add the rest of the cocoa powder and macadamia nuts till the nuts are finely chopped. Test your coconut mixture. Once it is the consistency of soft play dough scoop out and roll into balls. Roll in the chocolate-nut mixture and place on a cookie sheet. Put back in the freezer and let chill till firm. Try rolling them in other things: shredded coconut - nuts - powdered sugar - chocolate sprinkles

Day 53: Chocolate Chip Cookies

No week of chocolate, no matter how hormonal it is would be complete without chocolate chip cookies. They're a classic! More American than apple pie. They're oowy, gooy, soft and chewy. Who doesn't love a chocolate chip cookie. Even Matthew and I, who can't whole our sugar, love to share a whole cookie from time to time. In fact, come to find out, Matthew snuck a box of organic chocolate chip cookies and 2 snack bags of famous amous in the other day. Like I wouldn't find out.....ha...perhaps he's been a bit hormonal too?

Vegan Chocolate Chip Cookies
2 c flour
2 tsp baking powder
1/2 tsp salt
3/4 c chocolate chips
3/4 c sweetener
1/2 c oil
1 tsp vanilla
1/2 c milk

Ok, I'm sure you've got it down by now. Mix the wet and the dry in separate bowls. Add the wet to the dry. Mix and roll into balls. Place on a greased cookie sheet and bake at 350 for 10-15 minutes or just eat the dough for cryin' out loud!

Day 50: Chocolate Pudding

So, last week I shared my poke recipe which is made with tofu....ya, soy. And this is the result - bear with me.

I love chocolate pudding. I love the silky, smooth, sweet, chocolaty-ness. Yes, there is just something about it that takes the edge off of a freak out session. Truly, a spoon full of sugar helps the hormones go down, and you know it's time for the hormones to go down when your husband hands you a bowl of chocolate with a tentative smile. Yes, I'm feeling much better now thanks to my adorable husband, his fantastic foot massage, and a little bowl of chocolate love - ahhh....join me.

Chocolate Pudding

2 c "milk"
3 tb unsweetened chocolate of choice
5 tb tapioca starch
1/2 c sweetener
1 tsp vanilla extract

In a sauce pan mix 1 c milk, chocolate (if you're using chips be sure to melt them first) sweetener and vanilla. In a separate bowl, mix 1 c milk and your tapioca starch. Slowly add the starch to the other ingredients. Stir constantly till it thickens. Pour into serving bowls and let sit for about 10 minutes (ya right...) Serve warm....I've never had it cold but if you can make it to that point, more power to ya!
