I have to blame a lot of this on my dear friend Penny. She is AMAZING! I love her to pieces! I was thinking about chocolate and my hormones were screaming for some and who comes to the rescue but Penny. She literally read my mind! She even had some fantastic macadamia nut chocolates shipped in! What a pal! This recipe is dedicated to her for saving the lives of Matthew and the villagers.
Chocolate Macadamia Nut Truffles
1/2 c heavy coconut milk
1/4 tsp salt
1/2 c sweetener
2 tsp vanilla extract
2 1/4 c cocoa powder
1/2 c macadamia nuts
In a sauce pan bring the coconut milk to a boil. Add the salt, sweetener, vanilla, and 1 c cocoa powder. Pour into a plastic bowl and freeze till firm but mold-able - about 3 hours. In your food processor add the rest of the cocoa powder and macadamia nuts till the nuts are finely chopped. Test your coconut mixture. Once it is the consistency of soft play dough scoop out and roll into balls. Roll in the chocolate-nut mixture and place on a cookie sheet. Put back in the freezer and let chill till firm. Try rolling them in other things: shredded coconut - nuts - powdered sugar - chocolate sprinkles
Ok, I'm back. I think those brownies really did the trick. And to celebrate I say "let them eat cake." I've never been a big fan of sugar, chocolate in particular. They always tend to give me sugar head aches, does anyone else get those? But since I can control the sweetness factor I've been liking chocolate a lot more. Ever since I was a kid my birthday cake has always been a chocolate cake with no icing....icing...yucky!
When it comes to vegan cake, our favorite line is from the movie "Bedtime Stories" with Adam Sandler when he walks into the birthday party, "whats that smell? Is that the donkey" and the little kid with his mouth full of cake replies " no, it's the cake" while vegan cake isn't always "rank"ed on the top of the list of party foods - This cake really takes the cake if ya know what I mean.
Vegan Chocolate Cake
1 1/4 c white flour
1 c sugar
1/3 c unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 c warm "milk"
1 tsp vanilla extract
1/3 c oil
1 tsp vinegar
In two separate bowls mix the wet and the dry. Pour the wet into the dry and blend. Pour into a greased 9 x 13 pan and bake on 350 till a toothpick comes out clean. Let sit for a few minutes and only put icing on it if you absolutely have to.
Great, I'm totally breaking out, I'm craving all sorts of foods that I can't get on island and now my husband asks first if it's safe for him to come in to the room. I've gone from the verge of a freak out to the verge of tears. We'll talk about this later - here.

Chocolate Brownies
1 c oil
1 c maple syrup
1/2 c "milk"
1 tb vanilla
1 c wheat pastry flour
1 c white pastry flour
1 c cocoa powder
In 2 separate bowls, mix the wet and the dry. Add the wet to the dry, pour into a greased 9 x 13 pan and bake on 350 till the top starts to crack. Pull out and let sit till they firm up.
